On the other hand...

I know that yesterday I waxed a little (too) profound about bagels and eggs.  But today, I remembered that if you have a bunch of apples and some butter and sugar, you can turn a few eggs into a crazy-delicious apple pancake. I used this recipe, but with lots more apples, because hey, why not?

Add some bacon on the side (to sop up the butter and brown sugar that oozes off the bottom of each slice) and a nice cup of black tea, and you are well on your way to other pretty sublime feelings of balance and peace.  Or at least a cinnamon-sugar rush.

It's not an egg sandwich, that's true. But on Saturday mornings, it might just be better...
